Research Activities

In the Laboratory of Food Biochemistry, the research topics are focused on Food Biochemistry and Biotechnology with a particular interest in the following subjects:



• Enzyme production under submerged and solid state fermentation;



• Biochemical characterization of industrial enzymes;



• Biotransformation of food matrices and agroindustrial wastes for the production of bioactive compounds;



• Enzymatic hydrolysis of proteins and production of biopeptides;



• Biological properties of bioactive compounds, including antioxidant, antimicrobial, antihypertensive and antiadipogenic activities;



• Purification and identification of bioactive compounds by chromatography and mass spectrometry;

Possui graduação em Engenharia de Alimentos pela Universidade Federal do Ceará, Mestrado e Doutorado em Ciência de Alimentos pela Universidade Estadual de Campinas. Atualmente é professor doutor da Faculdade de Engenharia de Alimentos da UNICAMP. Tem experiência na área de Ciência e Tecnologia de Alimentos, atuando principalmente nos seguintes temas: microbiologia industrial, biotecnologia, bioquímica de alimentos, desenvolvimento e otimização de processos utilizando métodos estatísticos como planejamento experimental.
