Possui graduação (2002), mestrado (2005) e doutorado (2009) em Engenharia de Alimentos pela Universidade Estadual de Campinas. Atualmente é Professora Associada I da Universidade Estadual de Campinas. Foi Professora Adjunta II (08/2010 a 12/2012) na Universidade Federal Rural do Rio de Janeiro e Professora Adjunta A na Universidade Estadual de Londrina (12/2012 a 03/2016). Também foi bolsista Produtividade em Pesquisa da Fundação Araucária (2014-2016). Tem experiência na área de Engenharia de Alimentos, atuando principalmente nos seguintes temas: secagem, microencapsulação, hidrólise enzimática de proteína e transição vítrea.

• Food drying: optimization of drying conditions aiming to preserve bioactive compounds and functional properties; influence of glass transition during drying and storage; evaluation of several dryers, such as convective dryer, fluidized and spouted bed dryers and spray dryer;


• Encapsulation of bioactive compounds: study of several techniques, such as spray drying and complex coacervation; development of new wall materials by enzymatic hydrolysis of proteins;


• Application of enzymes to obtain bioactive peptides, improve the extraction of food compounds and develop new wall materials.
